GBMC Sleeved Chef Prepares Chili & Lemon Thyme Wings

Every month, GBMC holds a Facebook Live cooking demonstration featuring healthy recipes from The Sleeved Chef, Michael Salamon. Michael graduated from the Culinary Institute of America and is passionate about “teaching cooking techniques and recipes to pre- and post-operative bariatric patients.” He had a type of bariatric surgery known as a sleeve gastrectomy in September 2016 and enjoys sharing his knowledge of cooking with fellow weight loss patients. Co-hosting the demonstration with him is Jana Wolff, RD, LDN, Director of Nutrition for GBMC’s Comprehensive Obesity Management Program, where Michael was treated.

Chili
Ingredients

2 pounds 93% lean ground beef
4 cloves garlic, minced
1 yellow onion, sliced
2 celery stalks, sliced
2 carrots, sliced
1 zucchini, sliced
1 yellow squash, sliced
1 can tomato paste
1 can chopped tomato
2 TBSP chili powder
1 tsp ground cumin
1 tsp ground oregano
1 tsp salt
1/4 teaspoon cayenne pepper
Greek yogurt, for serving
Lime wedges, for serving

Directions
  1. Place the ground beef in a large pot. Cook over medium heat until browned. Remove from the pot and place on a plate lined with a paper towel.
  2. Sauté garlic, onion, carrot, celery, zucchini, and yellow squash until tender, about 3-4 minutes
  3. Add tomato paste and cook for an additional 2 minutes
  4. Add tomatoes, ground beef, chili powder, cumin, oregano, salt, and cayenne. Stir together well, cover, and then reduce the heat to low. Simmer for 1 hour, stirring occasionally. If the mixture becomes overly dry, add 1/2 cup water at a time as needed.

Lemon Thyme Wings
Ingredients

1 lb chicken wings
3 lemons, juiced
3 garlic cloves, crushed
1 TBSP extra virgin olive oil
1 TBSP chili powder
6 thyme sprigs
Salt and pepper to taste

Directions
  1. Combine lemon juice, garlic cloves, chili powder, thyme, olive oil and mix thoroughly.
  2. Pour over chicken wings and toss to coat thoroughly. Marinate wings for 4-6 hours.
  3. Remove wings from the marinade and pat dry.
  4. Cook wings in air fryer for 15-20 minutes or until crisp
